2022 marks a historic milestone, with Her Majesty the Queen becoming the first British monarch to reach a Platinum Jubilee. The festivities, in honour of the Queen’s 70th Platinum Jubilee, will take place from Thursday 2nd to Sunday 5th June on a four-day bank holiday weekend. Many of us will be coming together to host or attend special events and activities, from hosting a BBQ, having a street party, and afternoon teas to picnics. It’s likely you will want to bake or bring something special for the occasion. We have put together a delicious selection of cakes, baking inspirations and easy recipes, shared by a few of our team members, to impress your friends, family and loved ones.
Will you be celebrating the Queen’s Jubilee by baking something special? We'd love to see your Jubilee bakes! Share them with us on socials, Facebook and Instagram, by tagging #CotswoldJubilee, or email them in to custserv@cotswoldcollections.com.
We have asked everyone around the office to let us in on their favourite cakes they would bake with their family or buy for any occasion. Read on to discover what they are:
I will be cheating a little by buying a sponge cake and decorating the top with clotted cream, fresh blueberries, and raspberries in a Union Jack. – Sharman
We will have our family's favourite, fruit cake during the Jubilee weekend. - Paula
Me and my daughters will be organising a virtual afternoon tea with my cousin from Canada. My daughters will be dressing up with their lovely tiaras. We’re thinking of having a British classic, scones with strawberry jam and clotted cream. Lemon being the Queen’s favourite flavours, she even had lemon posset at her wedding, we will be adding a twist of lemon curd to our scones, so they are fit for the Queen herself. – Michelle
During the Jubilee weekend, my mum will be baking her vegan Victoria sponge cake for one of our family gatherings. Here’s some pictures and recipe of her recent bake of the sponge cake. – Charlotte
My wife is baking her favourite Lemon drizzle; I usually bring this delicious cake into the office around my birthday as my colleagues also love them. Here’s the picture of her lemon drizzle and recipe. – Tom
My mum will be making my favourite (pineapple and raisin muffin) I’ve loved since I was a toddler, and she has always made for me and my brother. – Laura
